This ginger scallion shrimp is one of our favorite ways to cook shrimp, and seafood in general. The combination of scallion and ginger shrimp in a hot wok really can't be beat.
Ingredients
- 12 shrimp, peeled and deveined
- 2 scallions
- a 2-inch piece of ginger, thinly sliced
- 1 dried chili pepper, sliced (optional)
- 2 tablespoons oil
- ¼ teaspoon freshly ground white pepper
- pinch of salt
- 1 tablespoon shaoxing wine
- 1 teaspoon soy sauce
