Chicken Parmesan Muffins
INGREDIENTS
- 1 lb ground chicken
 - 1 egg yolk, lightly beaten
 - 1/3 cup panko breadcrumbs
 - 1 tsp olive oil
 - 2 cloves garlic, minced
 - 1 small onion, very finely minced OR grated
 - 1 tsp dried basil
 - 1/2 tsp dried thyme
 - 1 tsp dried oregano
 - 1/2 tsp salt
 - 1/2 tsp black pepper
 - 2/3 cup grated Parmesan cheese, divided
 - 4 oz fresh mozzarella, cut into cubes
 - 1/2 cup marinara sauce
 
- Preheat oven to 350 degrees. Lightly grease a 12 cup muffin tin with cooking spray or use silicone liners.
 - In a small pan, heat 1 tsp oil over medium heat. Add onion and garlic and lightly sauté for 1-2 minutes. Allow to cool for 5 minutes.
